Fritaja

Fritaja is an egg dish (omelette) typical of Koper, Piran and other places in Slovenian Istria. There are many different types of fritaja. It is prepared with side dishes such as wild asparagus, chicory or herbs. Traditionally, fritaja is cooked in a frying pan in olive oil and served warm, often as a stand-alone dish or as a side dish to meat dishes.
